Well it was there in your first screenshot.
Edit: After reboot, I still didn't have analog sound. So I reinstalled the package. Then I noticed a category in systemsettings sound, USB Audio & HID Analog Stereo, maybe it was there before & I didn't notice it because of the USB in front, but I think I played around with it yesterday with no luck. But this time there was a Analog Stereo Output options which fixed the issue for me.
Is this a USB connected sound device (ie one you plug in with a USB cable), or is it one of those internal sound cards that connect to the motherboard via USB (ie it's all inside the computer case)?
If the latter, perhaps your sound stopped working because of the alsa-ucm-conf bug and you changed sound settings trying to fix it, but didn't try the USB device until after the bug fix was released?
