Is it ok to add spacing in the fstab file so that all of the columns are lined up and easier to read?
Again, it's in the manual:

Code:

Each filesystem is described on a separate line. Fields on each line are separated by tabs or spaces. Lines starting with '#' are comments. Blank lines are ignored. The following is a typical example of an fstab entry: LABEL=t-home2 /home ext4 defaults,auto_da_alloc 0 2
Any number of spaces or tabs between fields is fine, as per the example(s) given. The 'column' utility can even do that for you, there's an example for prettifying /etc/fstab in 'man column'.
