I can see two settings in KDE Plasma which could help.
In settings you have the Activities as sunrat already wrote. There you can change the default activity or create a new and change to "do not track".
And there is a setting "Recent Files" under "Workspace Behavior" where "Remember opened documents" can be disabled.
If you are really afraid of someone could find your private documents or traces of it's filenames I think the best solution would be to have an encrypted filesystem.
