I managed to reinstall gnome again and its dependencies after trying the full-upgrade: I took note of what packages it wanted to uninstall, I had to reinstall some of them afterwards but it went smoothly.
I now have no packages to uninstall / upgrade:Thank you for pointing out the ~o option, I do seem to have a big quantity of orphaned and/or old unused manually installed packages and/or dependencies:I'll go over these and try to remove the ones that are not necessary.
I'll just point out that when I open aptitude and try to resolve dependencies, it shows me a very big (infinite?... probably not, but very big) list of possible actions where most of them suggest to keep one or two packages and leave a bunch of other recommendations unresolved:

If you have any idea on how to tackle the latter I would appreciate it.
